MSA - Independent Boning Rooms
Meat Standards Australia (MSA) is a beef eating quality grading program that allows consumers to purchase beef to the eating quality they desire. Using MSA certified product provides businesses with an opportunity to increase customer satisfaction by supplying meat of a consistent and identified eating quality. Customers may be prepared to pay more for beef if their expectations are met and businesses will profit from this. So, it is important that every step of the supply chain considers the impact of its role on the end eating quality result.
Objective: The aim of this course is to provide boning room and loadout operatives with the knowledge and skills to maintain identification and integrity of MSA product.
Learning Outcomes: By the end of the training each participant will have an understanding of -
1. MSA Carcase sorting systems
2. MSA cut x cook reports
3. Identifying MSA Primal's during packing
4. MSA carton labelling requirements
5. Load out requirements for MSA products, including cartons and carcases
6. The effects of procedural variations to MSA products
Assessment criteria: There will be a series of activities throughout the training. At the completion of the training there will be a short question and answer assessment to ensure the key MSA requirements are met.
